We are currently recruiting for the exciting role of Chef de Cuisine to join our Carriage House Kitchen team.

This is a unique opportunity to join our award-winning team of chefs, led by our Director of Culinary, Loughlin Druhan a distinguished professional with a career spanning Europe, North America, Africa, and Asia.

The successful candidate will also work closely with our Carriage House Food & Beverage Manager, Patrick McArdle. We offer an exceptional working environment, state of the art equipment, staff accommodation & development opportunities that are Beyond Everything.

The glazed Terrace is a culinary destination serving breakfast and lunch daily. Boasting striking views of the putting green and manicured landscape, the Terrace perfects the transition between indoors and out. Taking centre stage is the open show-kitchen, allowing guests to observe as chefs artfully prepare refined salads, sandwiches and gourmet pizzas. In the evening, service flows into the Restaurant where guests can enjoy exceptional food and impeccable service in a stylishly relaxed atmosphere.

Just a three-minute walk from the manor house, but very much a destination in itself, The Carriage House is an important part of the resort and local community, comprising of team of 22 chefs and 35 food and beverage team members. From breakfast all the way through to last orders, The Carriage House has a vibrant life of its own, where it is all about exceptional attention to detail presented in an effortless way. Elegant, bright and welcoming, guests and locals are here to enjoy a well-made martini in the comfortably glamorous Bar, a leisurely lunch with friends or family on the airy glazed Terrace or a romantic evening in one of the Restaurant's cozy booths.

We are looking forward to hearing from people as exceptional as the hotel itself and people whose passion for excellence & innovation will leave a lasting impression on our guests. The ideal candidate must hold a recognised degree in culinary arts and have at least 5 years' experience in 5-star hotels or high end steakhouse with at least 3 of those years at Chef management level.

As a Chef de Cuisine at The Carriage House you will:

  • Manage a large team of Culinary professionals in a fast paced environment.
  • Have the ability to handle multiple tasks with attention to detail.
  • Follow 100% HACCP guidelines in the workplace & following these procedures is essential.
  • Design menus in conjunction with the Director of Culinary and Executive Sous Chef. These needs to meet the target market and are in line with the operating concept for the restaurant.
  • Assume responsibility for increasing departmental sales and profit.
  • Minimize payroll costs by maximizing the productivity and efficient scheduling of employees.
  • Control food cost & wastage.
